Set it and Forget It Crockpot Chicken
This dish is so easy to prep and you only need a few ingredients on hand!
I lb. of Organic chicken breasts or thighs
1/2 yellow onion sliced
1 12 oz. jar of your favorite green salsa
Optional ingredients - black beans, pinto beans, corn
Optional toppings - cilantro, avocado, greek yogurt (sour cream), Monterey jack cheese
Put chicken, sliced onion, and a jar of salsa in a crockpot. If you are adding beans or corn to the dish, place about 1 cup of each in the crockpot as well. Turn the crockpot on low for 7 hours. Set it and Forget it until your house begins to smell so delicious that you can't wait until the next day to have it.
I love to have this over brown rice or quinoa with cilantro, avocado, and greek yogurt on top. You can also roll them into burritos which are oh so yummy! My favorite tortillas are Ezekiel sprouted grain tortillas. Enjoy!
