Turkey Taco Salad Recipe

Here is one of my favorite dinners to make when in a time crunch.  Quick and full of flavor!

INGREDIENTS

    • 1 lb. ground turkey
    • 1 tbsp. olive oil
    • 1/4 tsp cumin
    • 1/2 tsp garlic powder
    • salt and pepper to taste
    • (For salad, optional toppings):
    • 1 head of romaine lettuce (washed and chopped)
    • Sliced avocado
    • Black beans
    • Corn
    • Dallop of Greek yogurt (in lieu of sour cream)
    • Reduced fat Mexican cheese 
    • Brown rice 
    • (For dressing)
    • 1 jar of Trader Jose's green chili salsa (or your favorite salsa)

INSTRUCTIONS

  1. To cook the turkey, heat a tbsp. of olive oil in a skillet.  Once skillet is hot, add turkey meat and cook until no longer pink. Add seasonings to turkey meat and stir to combine.  Cook 1-2 minutes and then remove from heat.
  2. To make the salad, place 1 1/2 cups lettuce on each plate, top with 3/4 cup turkey taco meat mixture, 1 tbsp of optional toppings listed above and 2 tablespoons of salsa.
